ITALIAN BONELESS CHICKEN 
6 eggs, beaten
2 c. grated Parmesan cheese
1/2 c. fine dry bread crumbs
4 c. finely chopped cooked chicken
2 c. Mozzarella cheese, shredded
3 tbsp. butter
Spaghetti sauce (if you make your own, that's great, but if you're in a hurry, I find Prego Chunky Mushroom and Tomato is just fine)

Combine eggs, Parmesan cheese and crumbs. Stir in chicken. Mix well and shape mixture into 16 3/4 inch thick patties. In a large skillet, cook patties in butter over medium high heat for 2-3 minutes per side or until browned. Drain patties, arrange in two 10 x 6 x 2 inch baking dishes. Spoon sauce over patties. Sprinkle with Mozzarella cheese. Bake 25 minutes in 350 degree oven or until hot.

These patties freeze well. I make them ahead, freeze and take them out as needed. Throw a little sauce on them and people think you've been slaving for hours.
