MOUSSAKA 
1 lg. eggplant
3 lg. potatoes
1 1/2 lb. ground beef
1 lg. onion, chopped
1 can tomato paste
1 can water
Salt and pepper
1 tsp. sugar

Slice and soak eggplant in cold salted water 1 hour. Drain, wipe dry and fry in vegetable oil until light brown. Fry potatoes until brown; drain on paper towel. Brown ground beef, add onions, garlic salt, tomato paste, water, salt, pepper and sugar. Let cook until liquid evaporates.

CREAM SAUCE:

3 tbsp. flour
1 tsp. salt
1/4 c. grated cheese
3 1/2 c. milk
1/8 lb. butter
3 eggs

Brown flour in sauce pan, add butter, milk, salt and grated cheese. Beat eggs until light and add to sauce before milk begins to boil. Stir sauce until it thickens. In a 9 x 13 inch pan, layer alternately the vegetables and ground beef mixture sprinkling grated cheese on each layer.
