TOFU - VEGETABLE CASSEROLE | |
2 c. fresh broccoli, flowerets or chopped broccoli 2 med. onions, diced 16 lg. fresh mushrooms, sliced thin 3 med. tomatoes, diced 16 oz. plain low-fat yogurt 2 pkg. firm tofu, drained overnight, cut into 1/2 inch cubes 4 tbsp. sesame seeds 1 pkg. dry Lipton's onion-mushroom soup mix Preheat oven to 350 degrees. Combine first four ingredients and mix lightly. Oil a casserole. Combine yogurt and soup mix in a bowl. Place vegetable layer in bottom of casserole. Top with a layer of tofu. Top with a layer of yogurt mixture then sesame seeds. Repeat layers. Bake 30 minutes at 350 degrees. |
