HEARTY CABBAGE SOUP 
1 lb. lean ground beef
1 to 2 lg. onions, chopped
2 cloves garlic, minced
1/2 c. diced celery
1 green pepper, chopped
2 tbsp. oil
1 (28 oz.) can tomatoes or 2 lbs. fresh or 2 c. frozen tomatoes
2 (5 1/2 oz.) cans tomato paste
2 c. raw, diced potatoes
2 c. diced carrots
4 c. beef stock
Salt and pepper to taste
Paprika
6 to 7 c. coarsely chopped cabbage

Saute beef, onions, garlic, celery and pepper in oil. Add remaining ingredients except cabbage. Simmer for 1 hour. Add cabbage. Simmer for 1 hour more, adding more water - up to 3 cups if necessary. Yield: 6 to 8 servings.
