2 c. sugar
1 c. water
1 c. peanut butter
1 tsp. vanilla extract
1 c. miniature marshmallows (packed softly)

Bring sugar and water to a boil, stirring frequently. Boil until a drop of the water forms a soft ball in ice water. Remove pan from heat and add peanut butter, vanilla and marshmallows. Beat until blended and smooth, then pour into a 9 inch square baking dish. Chill until firm, then cut into squares.

This fudge is a favorite at pot lucks and parties. Even people who don't like peanut butter love this fudge.
