TURKEY CUTLET SCAMPI 
4 turkey cutlets
3 cloves garlic
1/4 lemon
1 med. yellow onion
1/2 cube butter
1 c. rice
1 c. chicken broth

Heat medium pan over medium heat with butter. Add onion and garlic and saute (not brown). Cook turkey until done, not brown, add lemon. Cook rice with chicken broth (no water) until done. Serve cutlets over rice. Enjoy!

It was ok, but I needed to doctor it up a bit with 1/2 can of cream of chick soup and pepper. I would make it again. It is quick and easy.

This recipe sound great. In my house we make a chicken scampi with peppers, red onions, chicken broth, try adding a splash of white cooking wine, and if you like mushrooms, add those too.
