TURKEY CUTLET PARMESAN 
1 pkg. turkey cutlets, about 5 pieces
1 pkg. grated Mozzarella cheese
1 c. Italian bread crumbs
1 egg, well beaten
1/2 c. grated Parmesan cheese
Chopped parsley
Pepper
1 c. Italian tomato sauce or olive oil
Chopped garlic (optional)

Beat eggs well, dunk turkey cutlets in egg mixture until well covered. Dredge cutlets in bread crumb, cheese mixture on both sides. Warm skillet with oil, drop cutlets in skillet. Fry until light golden. Place in baking dish that has 1/2 of tomato sauce in it. Spread Mozzarella cheese on top of meat, add tomato sauce and sprinkle with chopped parsley (chopped garlic), pepper. Bake in oven at 400 degrees for about 20 minutes. Serve with your favorite pasta.

I made this recipe for my family and they absolutely loved it! I used Barillas Parmesan Garlic Tomato Sauce and it was very tasty! Served with Pasta! Very easy, tasty dish!

I also used a spaghetti sauce. This is ton of food though. Its just 2 of us, my husband and i, and we had a lot of left overs. Good recipe though.

This was very good. I used Marinara sauce instead of the tomato sauce and made with bow tie pasta. My son loved this. When I make this again I will cut the cutlets in thirds before cooking for ease of eating.

This recipe is absolutely delicious! I am not one to use recipes due to some not-so-good experiences I've had in the past, but this was one of my favorite. Tasted just like I was at a good Italian restaurant. And, it wasn't difficult to make. I'll definitely be making this in the future! Best thing is that every ingredient I needed was already in my pantry!

To those speaking of overly large dinner with this. Easy to cut recipe down. Works with ALL recipes. First - cut recipe amounts in 1/2... then cut that down again - by 1/2... You will end up with a serving for one or two. Some cookbooks - have a breakdown of ingredient amounts... for example: 1 Cup = 16 Tablespoons... 3/4 cup = 12 Tablespoons - 1/4 cup = 4 Tbsp. Find a copy of the breakdown - keep on hand. I can turn absolutely ANY recipe... down to size - just for myself.

Example of cutting this down; 2 cutlets - 1/2 pk Mozz - 8 T Italian bread crumbs - 1 egg - 1/2 c grated Parmesan - chopped parsley - pepper- 8 T. sauce... when you can find this breakdown - it also includes breaking down into ounces - teaspoons, etc., I have redone over 200 recipes. Saves money - saves having a lot of leftovers.
