FINNISH CUPCAKES 
2 c. Bisquick
2 eggs
1 c. milk
Strawberry or raspberry jam
Sweetened whipped cream

Beat baking mix, eggs and milk with hand beater until smooth. Pour batter by tablespoonsful onto hot griddle to form dollar-size pancakes. Cook until pancakes are dry around edges, turn. Cook other sides until golden brown. Top with jam and whipped cream.
