CHEESY GARDEN CASSEROLE | |
1 zucchini, thinly sliced (1 c.) 2 c. cooked brown rice 2 c. broccoli, cut in 1/2 inch slices 2 carrots, cut in julienne strips (1 c.) 1 c. green beans, cut 1 (16 oz.) jar marinara sauce 1 c. (4 oz.) shredded Longhorn cheese 1 c. (4 oz.) shredded Jack cheese Place cooked rice in bottom of 10x6x2 baking dish. Cook broccoli, carrots, zucchini and green beans in boiling water just until tender (5-7 minutes). Drain. Spoon vegetables over rice, reserving 4 zucchini slices for garnish. Top with marinara sauce. Cover and bake in 375 degree oven for 30 minutes. Combine cheeses and sprinkle over casserole. Return to oven to melt cheese. 6 servings. |
