CHEESY CHICK-OLE CASSEROLE 
1 (16 oz.) can crushed tomatoes
1 pkg. taco seasoning mix
1 green pepper, coarsely chopped
1 1/2 c. cooked, cubed chicken
3 c. cooked rice
1 (8 oz.) pkg. shredded cheddar cheese

Simmer tomatoes and taco seasoning for 10 minutes, stir in green pepper and set aside. Grease a casserole dish. Layer ingredients by spooning half of the rice into casserole. Spoon one cup of sauce over rice. Add chicken, one half of cheese, remaining rice, remaining sauce and remaining cheese. Bake 15 to 20 minutes until mixture is hot and bubbly and cheese melts. Serve with corn chips, sour cream and tomato wedges.
