CHICKEN GUMBO 
2 cans stewed tomatoes (14 1/2 oz.)
1 c. water
1 c. chicken broth
3 chicken bouillon cubes
3 c. cooked chicken diced
1 lg. bag frozen mixed vegetables
1/2 bag (16 oz.) frozen cut okra
1/2 c. un-cooked rice or macaroni
2 to 3 tbsp. Cajun Quick Spicy Chicken Seasoning

Combine first 7 ingredients, including all liquid from the stewed tomatoes. Simmer covered for at least 1 hour. Add second ingredients and cook covered until rice or macaroni are tender. Serves 6.
