CARROT CAKE 
2 c. flour
2 c. sugar
4 eggs
3 c. grated carrots
1 tsp. vanilla
1 1/2 c. oil
2 tsp. cinnamon
1/2 tsp. salt
1 tsp. baking powder
2 tsp baking soda

Mix all dry ingredients together. Add oil, eggs and vanilla; blend well.

Bake at 350°F for 30 minutes in 2 - 9 inch round cake pans that have been greased and floured. Remove cakes from the oven and cool completely. Slice each cake in half giving you 4 round cake pieces.

Icing:

1 lb. box powdered sugar
8 oz. pkg cream cheese
1 stick butter
1 tsp. vanilla
1 small can crushed pine apples, slightly drained
chopped walnuts

Mix icing ingredients together until well blended. Layer icing between each cake layer and top cake with remaining icing.
