PEPPER STEAK 
1 1/2 lb. top beef round or sirloin, 3/4 inch thick
1/4 c. salad oil
1 c. water
1 med. onion, sliced
1/2 tsp. garlic salt
1/4 tsp. ginger
2 med. green peppers, cut into strips
1 tbsp. cornstarch
2 to 3 tsp. sugar
2 tbsp. soy sauce
2 med. tomatoes
Cooked rice

Cut meat into strips. Cook in hot oil until brown, about 5 minutes. Stir in water, onion, garlic salt, and ginger. Heat to boiling, reduce heat, cover and simmer 12 minutes. Add green pepper strips.

Blend cornstarch, sugar, and soy sauce; stir into meat mixture. Stir constantly until thick and boiling. Cut tomatoes and place on top. Cover and cook over low heat until tomatoes are heated. Serve over rice.
