CHOCOLATE CAKE FOR DIABETICS 
3/4 c. flour
3 tbsp. cocoa
1 tbsp. sweetener
1 tsp. baking powder
3/4 c. cold water
1 tbsp. oil
1/4 tsp. baking soda
1 egg, beaten
1 tsp. vanilla
1/4 tsp. salt
1/4 c. cold coffee

Sift together dry ingredients. Blend coffee, cocoa, egg, sweetener, oil, water and vanilla. Add dry ingredients, mixing only until smooth. Bake in 8" square pan greased with butter. Cover pan with foil and place in shallow pan of water.

Bake for 25 minutes in 350°F. oven. Remove from pan onto rack and cool.
