OPAL'S EASY SALMON CROQUETTES 
1 can red salmon
1 egg
1 tsp. baking powder
1/2 c. flour
3 green onions, chopped
Salt and pepper

Drain salmon, reserving the juice. Mix flour, egg and salmon; add green onions and salt and pepper to taste. Add baking powder to salmon juice and then add to salmon mixture. Drop by teaspoons into hot oil. Fry until light browned. Serve with catsup if desired.
