CARROT CAKE 
2 c. flour
2 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
1 tbsp. ground cinnamon
1 c. coarsely chopped walnuts
1 c. raisins
3 eggs
1 c. vegetable oil
1 1/2 c. sugar
2 c. shredded carrots
2 tsp. vanilla

Preheat oven to 375 degrees. Lightly grease 9x5x3 inch loaf pan, line bottom with waxed paper, greased.

On waxed paper, sift together flour, baking soda, salt, baking powder and cinnamon, remove 1 tablespoon and toss with walnuts and raisins, set aside.

In large bowl, beat eggs, oil and sugar together until well blended. Stir in carrots and vanilla. Blend in flour mixture just until moistened. Spoon into prepared pan.

Bake 1 hour or until wooden pick inserted in center come out clean. Let cool in pan on wire rack 10 minutes. Remove from pan, cool completely.

Makes one loaf.
