FRUIT CAKE 
1 pkg. yellow cake mix
1/2 c. applesauce
4 eggs
1 tsp. salt
1 tsp. orange extract
2 c. dates (cut up)
1/2 lb. candied pineapple
1/2 lb. candied cherries
1 lb. (4 c.) walnuts
3/4 c. flour

Preheat oven 275 degrees, line two (8 x 4 x 3) loaf pans with three layers of waxed paper, grease. Mix fruit, dates and nuts with flour and set aside. Combine cake mix, applesauce, eggs, salt and orange extract and beat three minutes. Add fruit and nuts mixture. Pour into loaf pans. Bake 2 hours and 45 minutes. Cool, wrap in foil. Let mellow 2 weeks. Will make 6 small (6 x 3 x 2) loaves.
