NO-CHOLESTEROL ORANGE CAKE 
1 1/2 c. flour
1 c. sugar
2 tsp. baking powder
1/4 tsp. salt
1/2 c. Canola oil
1/2 c. orange juice
2 tsp. grated orange rind
4 egg whites

Grease and flour the bottom of a loaf pan. In a large bowl, stir together flour, sugar, baking powder and salt. Add oil and juice. Beat with a mixer on medium speed until smooth. Add orange rind. In a small bowl, beat egg whites with a mixer at full speed until stiff peaks form. Fold into flour mixture. Turn into loaf pan. Bake at 350 degrees F for 50 minutes or until cake springs back when touched lightly. Cool completely on a wire rack before removing from pan.
