CHOCOLATE MARBLE SOUFFLE 
3 tbsp. (3 env.) unflavored gelatin
1/2 cup cold water
8 eggs, separated
7 1/2 tsp. artificial sweetening
2 cups skim milk
1 tsp. vanilla
1/2 cup cocoa
1/2 cup nonfat dry milk
1/2 cup ice water

Fasten 6-inch band of aluminum foil around 1-1/2-quart souffle dish, allowing 4-inches to stand above top of dish. Soften gelatin in cold water. Combine egg yolks, liquid sweetening, skim milk and vanilla in top of double boiler; blend well. Cook over hot water, stirring occasionally, until thick. Remove from heat; add softened gelatin, stirring to dissolve. Chill until mixture begins to thicken.

Divide mixture in 2 bowls. Blend cocoa into mixture in one bowl. Beat egg whites stiff; fold half into each mixture. Combine dry milk and ice water; beat on high speed of mixer until stiff, about 10 minutes. Gently fold half into each mixture. Alternately spoon vanilla and chocolate mixtures into prepared souffle dish to create a marbled effect. Chill several hours until set.

Makes 10 servings.
