HOMINY CASSEROLE 
2 (15 1/2 oz.) cans drained hominy
2 c. bechamel (white) sauce (below)
1/2 c. shredded Cheddar cheese
5-6 slices bacon, partially cooked and drained

Prepare the sauce and add the hominy and cheese. Turn into a buttered 2-quart rectangular casserole. Place bacon on top. Bake on center rack at 400 degree oven for about 25 minutes. Makes 8 servings.

BECHAMEL (WHITE) SAUCE:

2 c. milk
4 tbsp. butter
4 tbsp. all-purpose flour
1/2 tsp. salt
Pepper to taste

Heat milk, do not scald. Melt butter in a saucepan, add flour and stir to combine. Stir mixture over low heat long enough for flour to cook, about a minute. Add milk all at once and stir once or twice. Continue cooking but do not stir until sauce has thickened. Add salt and pepper to taste. Makes 2 cups of sauce.
