CHERRY WALNUT BARS 
2 1/4 c. sifted flour
1/2 c. sugar
1 c. butter
2 whole eggs
1 egg yolk
1 1/2 c. brown sugar, packed
1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. chopped maraschino cherries
1 c. chopped walnuts

Sift 2 cups flour and white sugar. Cut in butter. Pat into 9 x 13 inch baking pan; bake at 350 degrees for 12 minutes. Beat eggs, egg yolk and brown sugar until fluffy. Sift remaining 1/4 cup flour with baking powder and salt; blend into egg mixture. Stir in cherries and nuts. Spread mixture over baked crust. Bake 20-25 minutes longer. Cool in pan on rack. Frost with cherry icing, if desired. Cut into about 4 dozen bars.

ICING: Combine slightly beaten egg white, 2 tablespoons cherry juice and about 2 cups powdered sugar; beat until smooth.
