PORK FRIED RICE 
2 c. rice or desired amount
4-6 med. size pork chops, center cut, cooked
1 lg. onion, diced
2 celery stalks, diced
1 egg
1 or 2 tbsp. soy sauce

Or beef or chicken, diced (your choice).

Prepare a desired amount of rice. Do not add salt. Cook rice until it is firm not mushy or sticky. Bake 4 to 6 medium pork chops. Season to taste. Beef or chicken can be substituted. Dice when done. Saute one diced large onion with 2 diced celery stalks. Scramble 1 egg. Add this mixture to rice. Now we are ready to fry rice. Put one shallow layer of rice in pot, gradually add soy sauce until light brown. Fry at medium heat. Then the next layer, until all rice is brown. Mix all ingredients together.
