POTATO BREAD 
5 lbs. flour
1 c. Crisco or lard
1 c. water
3 tsp. salt
1 qt. potato water
1 c. mashed potatoes
3 eggs
1 1/2 c. sugar
2 cakes yeast

Mix Crisco, eggs, sugar, and salt in a large bowl. Save potato water and add enough cold water to make it lukewarm. It should make 1 quart of liquid.

Mix yeast in 1 cup of water and set aside. Add mashed potatoes and water and mix well together.

In a very large bowl, put flour in and make it deep in the center. Add first ingredients and mix thoroughly. Knead down. Let stand for 4 hours. Knead down again. Put a damp cloth over it and place in refrigerator. Next day knead again. Make it into loaves. Let it rise until double. Bake at 400 degrees for 20 minutes.
