BASIC WHITE SAUCE 
2 to 2 1/2 c. milk
1 stick butter
5 1/2 tbsp. flour

Melt butter over low heat. Slowly add flour and blend until smooth. Add 2 cups milk, stirring constantly. Increase heat. Mixture will thicken. Can add 1/2 more milk to thin.
