MACAROON PIE 
12 Saltine crackers, crushed
15 pitted dates, chopped
1 c. chopped pecans or walnuts
1/2 tsp. almond flavoring
1 c. sugar
3 egg whites
1/2 tsp. baking powder

Crush Saltines. Add nuts and dates. Beat egg whites until foamy. Then add baking powder, sugar, and almond flavoring gradually. Beat until very stiff. Add Saltine, nuts, and date mixture and fold into well buttered pie pan. Bake 25 to 30 minutes at 350 degrees. Serve with or without whipped cream.
