GREAT - GRANDMOTHER BETSY'S
WEDDING CAKE
 
9 eggs
1 1/4 lb. flour
1 lb. butter
1 1/4 lb. sugar
1 oz. cinnamon
3/4 tsp. nutmeg
1 tsp. cloves
2 tbsp. grated orange peel
1 tbsp. grated lemon peel
1/2 c. molasses
1 lb. raisins
2 lb. currants
12 oz. citron

Makes 2 loaves.

FROSTING FOR CAKE:

3 egg whites beaten to a hard froth. Add 1 pound pulverized sugar and beat until it thickens. Add juice of 1 lemon and 2 teaspoons powdered gum arabic.

(Dictionary says gum arabic is from the acacias.) No directions are given for mixing the cake.
