LUMPIA 
1/2 lb. beef, pork or chicken
1 c. chopped cabbage
1 c. chopped carrots
1 c. chopped celery
1/2 c. chopped mushrooms
1 c. chopped green beans
1/2 c. bamboo shoots

It doesn't really matter what kind of vegetables you use as long as they are fresh. Chop everything very small.

PASTE:

1 tbsp. flour
1 egg white

GRAVY:

1 tbsp. soy sauce
Cornstarch
Water
Salt and pepper to taste

Brown meat. Add vegetables that take the longest to cook, first, when everything is still firm, drain grease and add gravy. Using teaspoon, drop on lumpia wrapper and roll like egg rolls. Dip finger in paste and seal edges and brush over entire roll. Hot fry in shallow cooking oil. Makes 30.
