OLD FASHIONED FRESH APPLE CAKE 
1 c. salad oil
2 eggs
2 c. sugar
2 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. baking powder
1 c. chopped pecans
3 c. sour cooking apples, chopped
1 (6 oz.) pkg. butterscotch chips

In large bowl mix well the salad oil, eggs and sugar. In separate bowl sift flour, baking soda, salt, cinnamon and baking powder. Add to first mixture. Stir in nuts and chopped apples; mix well.

Spread mixture in greased 9x13 pan. Sprinkle butterscotch chips on top of cake. Bake at 325 degrees for 45-50 minutes. Cool and cut into squares. Bake one day before serving.
