ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
2 c. grated zucchini
2 tsp. vanilla
3 c. flour
1 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
3 rounded tsp. cinnamon
1/2 c. nuts

Beat eggs until light and fluffy. Add next things by hand. Sift flour, soda, baking powder, salt and cinnamon. Add to mixture. Add nuts last. Grease two 8 1/2 x 4 1/2 inch pans. Bake at 325 degrees for 1 hour.
