FRUIT PIZZA 
2/3 c. butter
3/4 c. sugar
1 tsp. vanilla
1 egg
4 tsp. milk
2 c. sifted flour
1 1/2 tsp. baking powder
1/4 tsp. salt
8 oz. cream cheese
1/3 c. sugar
1 tsp. vanilla
Assorted fruit, drained and sliced (strawberries, bananas, peaches, cherries, kiwi)
1 c. mixed fruit juices or orange juice
2/3 c. sugar
2 tsp. cornstarch

CRUST: Thoroughly cream butter, 3/4 cup sugar, and 1 teaspoon vanilla. Add egg and milk; beat until light and fluffy. Sift together flour, baking powder, and salt. Then blend this into creamed mixture. Cover and chill at least 1 hour.

Pat chilled dough onto greased round pizza pan. Bake at 375 degrees for 10-12 minutes or until lightly browned.

CREAM FILLING: Blend together cream cheese, 1/3 cup sugar, and 1 teaspoon vanilla. Beat until light and fluffy. Spread filling onto cooled crust. Next, arrange fruit onto cream filling.

GLAZE: Mix 2/3 cup sugar and cornstarch; gradually add fruit juice. Let mixture come to a boil; boil for 1 minute or until clear and thick. Pour over fruit. Garnish with toasted coconut, if desired. Refrigerate.
