LITTLE RAISIN LOGS | |
1 c. raisins, finely chopped 1 c. pecans, finely chopped 1 c. butter, softened 1/3 c. sugar 2 tsp. brandy flavoring 2 tsp. vanilla flavoring 1/2 tsp. salt 2 c. flour 1 (6 oz.) pkg. semi-sweet chocolate pieces 3 tbsp. shortening Mix raisins and pecans. Thoroughly blend butter and sugar. Beat in brandy, vanilla, and salt. Stir in raisins, nuts, and flour. On a lightly floured board, roll dough into logs about 1/2 inch in diameter and 2 1/2 inches long. bake on ungreased cookie sheet at 325 degrees for 15 to 20 minutes. Cookies will not brown. Cool. Meanwhile, melt chocolate and shortening together over boiling water. Blend thoroughly. When cookies have cooled, dip one end of each into melted chocolate. Place on wire rack to set. 6 dozen. |
