TREE'S CHRISTMAS CASSEROLE 
I make this on Christmas Eve to enjoy Christmas Morning.

1/2 (2 lb.) bag tater tots
6 large eggs
1 1/2 cups milk
1/4 cup Bisquick baking mix
couple dashes Tabasco sauce
1 medium onion, sliced
1 clove garlic, minced
2 tbsp. olive oil

OPTIONAL INGREDIENTS:

1 cup sliced red and green peppers
1 cup sliced mushrooms
1/2 cup grape tomatoes, sliced in half
1 to 2 cups fresh baby spinach
1 lb. cooked sausage or bacon, crumbled (or a combination of both)
2 cups your favorite cheese, shredded (I use 1/2 Velveeta + 1/2 sharp cheddar), divided
pepper, to taste
paprika, to taste

CHRISTMAS EVE:

Spray a 9x13-inch baking pan with non-stick cooking spray (Pam) - a deep lasagna pan works best. Layer tater tots in the bottom of the pan.

In a mixing bowl, combine eggs, milk, Bisquick biscuit mix and Tabasco, set aside.

Sauté sliced onion in olive oil in medium sauté pan till soft (also sauté peppers and mushrooms if using). Add garlic, sauté 1 more minute. Layer cooked meat and vegetables over tater tots. Top with 1 1/2 cups of cheese.

Pour egg mixture over all top with remaining 1/2 cup cheese. Sprinkle with pepper and paprika and cover with plastic wrap, and top that with foil. Refrigerate overnight.

CHRISTMAS MORNING:

Preheat oven to 350°F, remove plastic wrap and replace foil.

Bake covered for 30 minutes, uncover and bake another 20 minutes. Let set on stove top for 10 minutes before cutting.
