CHRISTMAS CORN CASSEROLE 
1 c. chopped green onions
1 c. chopped celery
1 c. green pepper, chopped
2 tbsp. butter
2 (12 oz.) cans yellow whole kernel corn, drained
2 (12 oz.) cans white whole kernel corn, drained
2 (12 oz.) cans yellow cream style corn
1 (5.33 oz.) can evaporated milk
1 1/2 c. grated Swiss cheese
1 1/2 c. grated Cheddar cheese
3 tbsp. pimento, chopped and drained
3 eggs, slightly beaten
1 tbsp. salt
1 tbsp. pepper
1/2 c. butter, melted
2 c. snack crackers, crushed
1/4 c. melted butter

Saute green onions, pepper and celery in 2 tablespoons butter for about 5 minutes (celery should still be crisp). While sauteing vegetables put all remaining ingredients (except crackers in butter) in a large mixing bowl. Add sauteed vegetables and pour in lightly buttered 13 x 9 x 2 inch dish. Pour cracker crumbs evenly over mixture. Pour the 1/4 cup melted butter over entire dish. Bake in preheated 350 degree oven for 30 minutes. Makes a very pretty and delicious vegetable.
