PORCUPINE MEATBALLS 
1 lb. ground beef
1/2 c. rice
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. thyme
3 tbsp. chopped onion
6 tbsp. tomato paste or juice
1 can mushroom soup
2 c. hot water

Mix together beef, rice, salt, pepper, thyme, onion and 2 tablespoons tomato paste. Shape into balls and place in pan. Combine mushroom soup, remaining tomato paste and hot water. Pour over balls and bake 1 hour at 350 degrees. Serve with mashed potatoes or macaroni.
