GOURMET SCALLOPED POTATOES 
6 med. partially cooked potatoes, shredded
2 c. Cheddar cheese, shredded
1/4 c. butter
1 c. sour cream
1/3 c. onions, chopped
1 tsp. salt & pepper

Shred potatoes. Over low heat combine Cheddar cheese and butter. Stir until almost melted. Remove from heat and blend in 1 cup sour cream, onions, salt and pepper. Fold in potatoes and put in 2 quart casserole. Dot with butter and bake uncovered 30 minutes at 350 degrees.
