CREAM OF CHICKEN SOUP 
1 c. cooked, cubed chicken
2 tbsp. chopped onion
2 tbsp. butter
3 tbsp. flour
2 c. chicken broth
1 c. evaporated milk
1/4 tsp. salt
1 tbsp. lemon juice
1/8 tsp. cayenne pepper

Make a cream sauce of butter, flour and chicken broth, stirring constantly until bubbly and thickened. Add chicken, milk and seasonings and heat throughout.

Preparation time: 15 minutes. Yield: 4-6 servings,
