YAM SOUFFLE 
3 med. sweet potatoes
3/4 c. milk
3/4 c. chopped pecans
1/2 tsp. lemon or orange peel, grated
1/2 tsp. cinnamon
3/4 c. sugar
2 eggs, room temperature
1/2 tsp. vanilla
1/2 tsp. nutmeg
2 tbsp. baking powder

If fresh potatoes are used, boil, peel and chop. Mix all ingredients in a large bowl; pour into buttered casserole and bake at 350 degrees for 40 minutes.
