CRISPY SHRIMP OMELET 
1 lb. shrimp (cleaned, deveined and cut)
2 c. bean sprouts
1 c. sliced scallions

BATTER:

1 c. flour
1/2 c. cornstarch
Salt and pepper
1 c. water
3 eggs, beaten

Mix all ingredients together and drop in hot skillet, in which oil has been placed and heated. Cook until brown on both sides.
