ZUCCHINI PIE I 
3 c. zucchini, slice thin or grated
1 c. Bisquick
1/2 c. chopped onion
1/2 c. grated cheese (any type)
2 tsp. parsley, chopped
1/2 tsp. salt and pepper
1/2 c. oil
4 eggs, slightly beaten

In place of zucchini I use either frozen, chopped spinach or chopped broccoli (2 packages) and cook according to directions on package. Pour into 10 inch pie pan. Bake at 350 degrees for 45 minutes. Let stand a few minutes before cutting.
