PAELLA 
1 chicken, cut up in rather sm. pieces

Put a small amount of oil in a heavy kettle. Brown chicken and let fry until chicken is tender. Salt and pepper to taste.

Add:

3 leaves laurel
1 green or red pepper, diced
1 onion, diced
2 tomatoes, diced
1/4 c. parsley, chopped

Add:

4 c. water
Salt to taste
1 tsp. (more or less) cumin
1 tsp. (more or less) paprika
1 cube chicken seasoning (optional)

When all are boiling, add 2 cups of raw rice, gradually. Cover and let cook slowly. Add capers and olives towards the end - just to heat through. Let it steam slowly until rice is done. Mmmmmmmm! Love it!
