PAELLA VINCELINN 
Tomatoes
Pepper (green)
Onion
1 clove garlic, chopped

Saute above ingredients.

Saffron rice (2 demi tasse). Cook rice until almost done. Add to earthen ware casserole (or glass baking dish), add a small amount of chicken stock or broth. Add first sauteed combination. Mix with rice. Add: 2 scallops or shrimp 2 slices flounder (fillet) 2 chicken breasts (pre-cooked)

Bake at 350 degrees for 30 minutes. Check to see if you need more chicken stock. Add a sprinkle of peas, asparagus, pimiento and parsley. Enjoy.
