CHERRY TARTS 
2 (8 oz.) cream cheese
2 eggs
1 tsp. vanilla
Cherry pie filling
3/4 c. sugar
1 tbsp. lemon juice
Vanilla Wafers

Line cupcake pans with paper liners. Place one vanilla wafer in the bottom of each.

Mix cream cheese, sugar, eggs, juice and vanilla until smooth. Fill muffin cups approximately 1/2 to 2/3 full. Bake at 350 degrees for 15-20 minutes (I did the 15 minutes). Remove from oven and cool.

Before serving top with cherry pie filling. It usually takes 2-3 cherries on each. Recipe makes 24-30 tarts.
