OAT BRAN MUFFINS 
1 c. flour
1/2 c. oat bran
1/2 c. rolled oats
2/3 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 c. buttermilk
1/4 c. melted butter
1 egg, lightly beaten
2 tbsp. salad oil
1 tsp. vanilla
1/2 c. apple sauce (or raisins, or rhubarb, or bananas, etc.)

Mix dry and moist ingredients separately. Then add the moist to the dry stirring with fork only until the dry ingredients are wetted. Spoon into lightly greased custard cups or muffin tin and bake at 400 degrees for 15-18 minutes. They are done when the toothpick comes out clean and the tops are brown. Let them stand 5 minutes after baking and they will come out easier.
