PESTO 
40 basil leaves (one bunch)
2 plus garlic cloves, minced (to taste)
3 tbsp. pine nuts or walnuts, chopped
3 tbsp. Parmesan cheese, grated
5 tbsp. olive oil

Chop basil leaves in food processor. Add minced (or use garlic press) garlic and drop again. Add pine nuts or walnuts and chop again. Add cheese and olive oil and run food processor until completely chopped and mixed. Serve on pasta, toast, polenta. May be spread to desired thickness.
