BANANA LAYER CAKE 
2 1/2 c. sifted cake flour
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 c. shortening
2 eggs
1 c. mashed bananas
1/2 tsp. salt
1 1/4 c. sugar
1 tsp. vanilla
1/4 c. buttermilk

Sift flour, baking powder, soda and salt together. Cream shortening with sugar until fluffy. Add eggs, one at a time, beating after each is added. Stir in vanilla. Combine bananas and milk. Add sifted dry ingredients and milk mixture alternately in small amounts beating thoroughly after each addition. Pour into greased pans and bake in moderate oven (375 degrees) for 25 to 30 minutes. Makes 2 (9 inch) layers. Put layers together with whipped cream and bananas sliced. Spread whipped cream over top. Garnish with sliced bananas. May use 7 Minute Icing.
