BANANA LAYER CAKE 
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
3 egg whites
1 1/2 c. sugar
1/2 c. shortening
1 c. ripe bananas, mashed
3 egg yolks
2 tsp. vanilla
1/4 c. sour milk

Sift together flour, baking powder, baking soda and salt. Beat egg whites until stiff. Continue beating 1 minute longer while adding 3 tablespoons sugar. Set aside. Cream shortening and remaining sugar together. Add bananas and beat 1 minute. Add egg yolks, one at a time, and vanilla. Add flour mixture and milk alternately. Do not overbeat. Fold in egg whites with spatula. Can be baked in layer pans or 9 x 13 inch pan. Bake at 350 degrees for 30 to 40 minutes.
