BANANA LAYER CAKE 
2 c. mashed bananas (4 or 5)
1/4 c. milk
1 c. shortening
2 tsp. vanilla
2 c. sugar
4 eggs, unbeaten
4 1/2 c. sifted cake flour
4 tsp. baking powder
1 tsp. salt

Combine bananas and milk. Cream together shortening and vanilla; gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating well; mix until light and fluffy. Sift together flour, baking powder and salt. Add alternately with bananas and milk to creamed mixture, beating smooth after each addition. Pour into 3 (9") greased layer pans. Bake in moderate oven, 350 degrees, 30 to 35 minutes. Cool and put together with a good caramel icing.
