3 eggs 3 peeled potatoes (equal in size to eggs 3 slices cotto salami, chopped up Radishes (about 3/4 as much as the eggs and potatoes together) Kosher dill pickles (1/4 as much as eggs and potatoes together) Onion, chopped very sm. (green onions are good if you have them) 2 cloves garlic, sliced Dill and parsley, chopped Salt and pepper to taste 5 cans lite beer 1 pt. sour cream Boil the eggs and peeled potatoes. Cool and slice them. NO MORE HEAT FROM THIS POINT. Pour beer into a large non-metal container and let sit to lose its carbonation. Pour a small amount of beer into the sour cream and stir to thin it. Slice radishes and add all ingredients to beer, stirring sour cream in thoroughly. Stir and chill. Note: This cold soup is served in spring and summer in Leningrad and is a favorite at outdoor cafes. Men love it! |
