ZESTY POTATO SALAD | |
4 lg. potatoes 1 pouch Campbell's onion soup and recipe mix 3/4 c. mayonnaise 1/4 c. sweet relish 2 tsp. prepared mustard 1/4 tsp. pepper 1 1/2 c. chopped celery 2 hard cooked eggs, diced Place potatoes in large saucepan; add enough water to cover potatoes. Over high heat, heat to boiling. Reduce heat to medium low. Cover; simmer 30 to 40 minutes until potatoes are tender. Drain potatoes; cool, peel and cut into cubes. In large bowl, stir together soup mix, mayonnaise, relish, mustard and pepper. Stir in potatoes, celery, eggs. Cover; chill until serving time at least 2 hours. |
