BANANA CAKE 
1 1/2 c. shortening
4 1/2 c. sugar
1 tbsp. vanilla
6 eggs
2 1/2 c. mashed bananas
7 c. cake flour
1 tbsp. baking powder
1 tsp. baking soda
1 1/2 tsp. salt
1 1/2 c. buttermilk

Cream shortening, sugar and vanilla. Add eggs, 1 at a time. Beat well. Add mashed bananas and continue beating. Sift flour, baking powder, salt and salt. Add this alternating with the buttermilk. Blend thoroughly. Pour in greased 16 1/2 x 24 1/2 x 1 inch sheet cake pan and bake at 325 degrees for 1 hour. When cool, wrap and freeze. Top with sliced bananas and whipped cream. To thaw, let stand wrapped at room temperature 1 hour. Makes 40 to 50 servings.
